Camilo Merizalde has a history within the coffee industry to only produce the best. He began in 1997 when he purchased Finca Santuario in Huila, Colombia. Since the beginning it has always been Camilo’s vision to produce top shelf high quality coffees.
In 2017 Santuario became the ‘Santuario Project’ in partnership with Camilo’s friends within the industry and top coffee professionals. It is now the only specialty coffee producing company operating farms and mills in several countries at various levels.
The cherries for this lot are selectively picked when they reach 26-27° Brix level. They are then floated and manually sorted before going to raised beds under UV light and fans for lengthy 18-22 days of controlled drying. The level of attention to detail given to all parts of the chain begin right from the position and layout of his farms to varietals that he selects to plant. This is particularly important as the vast majority of varieties grown at Santuario are extremely high quality but lower yield, more fragile and more demanding than most varieties widely grown in Colombia.
