Upon delivery the workers are told to select the heaviest and juiciest coffee cherries as they contain the most sugars. The coffee ferments for 100 hours (approximately 5 days) allowing for the microorganisms to break down the sugars until the desired level is achieved. The coffee cherries are then laid out to dry in the sun for 50-60 days depending on the weather.
