As a general guide: 0–8 days post-roast: Coffee is fresh and drinkable, but may still be developing its full flavour. 9–35 days post-roast: Peak drinking window – flavours are well-developed and balanced. 35–56 days post-roast: Still tastes good, though flavour clarity may begin to fade. 56+ days post-roast: Coffee may start to taste stale or flat – we recommend using it sooner.

About Gobena Bendo

Muscat grape and apricot comfort.

At 65, Gobena Bendo has spent a lifetime growing coffee on the 10 hectare farm he inherited from his father in Yirgacheffe, and he hopes to one day pass it on to his children, many of whom still live nearby and help out. Sitting at around 2,200 to 2,300 metres above sea level, the farm benefits from the high elevation, shade and growing conditions that have made this part of Ethiopia so renowned, and alongside coffee Gobena grows cereals to feed his family throughout the year. What makes this lot special is its traceability, as it forms part of the Single Farmer Project, an initiative that creates a marketplace for individually separated Ethiopian coffees and gives producers greater visibility, so rather than disappearing into a regional blend it can be traced straight back to Gobena and his farm. This natural processed Local Landrace is roasted by Mecca as an omni for espresso and filter, delivering a rich and comforting cup of muscat grape and ripe apricot.
