High in the mountains of San Ignacio, Cajamarca, Roger Quispe tends to 14 acres of Caturra, Typica, and a touch of Catimor at Finca Cedro Quemado. He’s been at it for over 20 years, and it shows. The harvest here runs unusually long—from April through November—thanks to the slow ripening of cherries. It’s a challenge for pickers, but it’s also what gives this lot its depth and complexity.
This washed process Caturra is all about clarity and balance. Expect a crisp citric acidity, lots of sugary sweetness, and an ultra-refined finish that’s as clean as it gets. It’s the kind of coffee that rewards attention, but doesn’t demand it—approachable, yet quietly stunning.
